Cardamom Cherry Streusel Cake with a Cherry Rosewater Glaze
My first ever cake recipe—a gift to you on my birthday.
Good morning beautiful friends. Today is my birthday, and I thought it was the perfect chance to share this recipe with you. In my August Potluck I mentioned that I dreamt up my first ever cake recipe, which all came about by chance when I set out to bake a cake for a friend’s birthday. It’s got all of my favourite flavours in there, from cherry to cardamom to rosewater. It was a gamble to see how well these three very strong and distinct flavours would combine, but a gamble that delightfully paid off. If you aren’t a fan of rosewater, you can simply omit it from the glaze, or replace it with some almond extract. I haven’t included it in the ingredient list, but the cake pairs nicely with a dollop of cream and some fresh cherries as an accompaniment.
